Until Battaion Cellars started, the Livermore Valley was without an exclusive premium sparkling wine winery. This winery's primary focus is in providing its customers with a premium sparkling wine product ranging from aged vintages, to rose and non vintage brut sparkling wines.

All of our sparkling wine is fermented in the traditional “methode champenoise” style. It is the style in which all great sparkling wines derive. This process takes place in individual bottles. Once the base wines have been fermented and sometimes barrel aged, they are blended together. This blended wine is inoculated with yeast, sugar and nutrients for the start of secondary fermentation. It is then bottled. This is how the bubbles are created. Ageing after fermentation then takes place in the bottle, for a period of time.

Grape harvest comes earlier in the year for sparkling wine production. Extreme care and selection of grapes during harvest is crucial to the success of the finished product. Sugars, acidity and ph of the grape juice must be in balance. The grapes must also be free of disease and mildew. These are some of the critical factors in making great California Sparkling Wine.
